Recipe:Rice Noodle Rolls

Our family like to exchange recipes with friends, and sometimes we exchange food as well. My mother especially like cooking and sending food for her friends and our extended family. It is definitely one of her favorite past time. The other day, we made rice noodle roll at home to give out to friends. Originally, rice noodle roll is a Cantonese dish (Cheng Fun) where they rolled up meats, shrimps into a thick rice noodle and steamed it then topped with sweeten soy sauce. However, few years ago,we Thais  had made some modification to it, addling in some herbs and making the dipping sauce spicier and it had become popular ever since.

It is very easy to make and can be served as finger food at a party.

The uncut thick rice noodles can be found at some Asian Grocery stores or Asian market. Cut into square pieces around 4″ x 4″

minced pork marinated in a bit of soy sauce and pepper
carrot boiled and cubed
dried Chinese mushrooms – soaked and cut into small pieces
chopped garlic
fish sauce, sugar, light soy sauce, oyster sauce
 
 
 
To make the fillings :
– Heat the oil in the wok, add garlic and stir until fragrance
– Add in pork, carrot, mushrooms
– Flavoured with fish sauce, sugar, light soy sauce and oyster sauce
– Put in a bowl wait to cool

And last but not least, lots of herbs to garnish as well as accompany the dish. We usually use basil, lettuce and some other herbs.

  
  
 
To Roll

To roll the rice noodles, we actually use the same method used as rolling spring rolls where the fillings are lined at the edge of the noodles closest to you. Then fold top of it as well as both sides. and start rolling slowly.
IMG_3836Be careful not to put too much filling in, I’d say put about one and a half teaspoons or a bit less. While rolling, use your hand to tuck to keep the roll tight.

Now to make the sauce you’ll need sugar, vinegar, fish sauce and crushed chili

– Heat vinegar in a small saucepan, add chili and sugar and fish sauce in. The sauce should taste sour fist then salty.
