Stir-fried long beans with minced pork

In my cooking,  I do not have  exact measurements,  infact I just do it as I go.   In China, it’s hard to cook Thai food the fresh herbs and ingredients are hard to find here.  Once in a while when I crave for Thai Chicken basil (Pad Kra Prao – ผัดกระเพรา) I would just cook stir-fried long beans with minced pork instead.

– 1/2 bunch long bean trimmed and cut into about a centimetre long
-250 g  minced pork
– 4-5 diced red chilli
– 3 cloves chopped garlic
– 2 tbsp cooking oil
– fish sauce
– oyster sauce
– sugar
– cook the chopped long bean in boiled water for about 2 minutes, drain and rinse with cold water.
– heat oil in the wok until hot, add chilli and garlic until the aroma come out
– add the marinated minced pork (with fish sauce, pepper and a dash of oyster sauce) spread it in the wok, and keep stirring  until  brown.  
– add a pinch of sugar, oyster sauce and fish sauce then the long beans into the wok, keep on tossing until it’s thoroughly cooked.  
– remove from the heat and serve with jasmine rice.
Tips : Onion can be added into the dishes as well for more flavours.
